EBI Sunomono Salad with Organic Black Tiger Shrimp
Serves: 6-8 Prep Time: 10 Mins Cooking Time: 5 Mins
Ingredients
- 1 pkg Ocean Mama Organic Cooked Shrimp (defrosted)
- 300ml Rice Wine Vinegar
- 1 L Water (boiled)
- 6 tsp Sugar
- 4 bundles Rice Noodles
- ½ Carrot (julience)
- ½ Cucumber (sliced and halved)
- ½ Lemon (sliced and quartered)
- 1 Green Onion (sliced)
- to taste Sesame Seeds (optional)
Marinade
- 300 ml Rice Wine Vinegar
- 600ml Water
- 6 tsp Sugar
Method
Preparing the marinade: over medium-high heat, combine sugar, rice wine vinegar and water. Stir until sugar is completely dissolved.
Add noodles to a bowl of just boiled water. Stir to separate noodles and ensure all are underwater. Drain well once cooked (about 5min)
Pour the marinade over the noodle and place in the fridge for 2 hours, so the flavours can mingle.
While the noodles are marinating, prepare the garnishes: cut the cucumber in half, and slice. Slice lemon, and cut into quarters. Slice green onion. Julienne the carrots.
Separate ¼ of the marinated noodles and top with carrots, cucumber, four pieces of Ocean Mama Organic Cooked Shrimp, lemons and sesame seeds (optional)
Organic Shrimp on Gluten Free Pizza
Serves: 4-6 Prep Time: 30 mins Cooking Time: 25 mins
Ingredients
Gluten Free Dough
- 250g Nextjen All Purpose Baking Blend (Gluten Free Flour)
- 250g Milk(hot)
- 250g Milk(cold)
- 30g Olive Oil
- 10g Instant Dry Yeast
- 10g Salt
- 1 pinch Sugar
- 1 pinch Garlic Powder (optinal)
Toppings
- 1 bag Ocean Mama Organic P&D Shrimp (Defrosted)
- 1 C Pesto Sauce
- 1 C Arugula
- 1 C Parmesan Cheese
- 4 tbsp Balsamic Reduction
- ¼ Red Onion (sliced and pickled)
- 3 Green Onion (sliced)
Method
Dissolve yeast into cold milk and set aside
In separate bowl, combine flour and hot milk. Mix well. (Optional: Use dough hook on mixer for about 2 min)
Add sugar, powdered garlic, and oil. Fold to incorporate. (Optional: Use dough hook on mixer for about 2 min)
Add yeast mixture to dough mixture. Blend well. (Optional: Use dough hook on mixer for about 2 min)
Cover dough and let rise, in warm place, for 20min
While the dough is rising prepare Ocean Mama shrimp.(Simply pull tail to release it from the meat)
Lightly Oil pan. Take half of the dough, and gently push to create an even layer.
Layer ingredients for baking. Start with spreading an even layer of Pesto Sauce, add green onion and raw shrimp.
Top it off with parmesan cheese and bake for 15-20 minutes at 450 degree
Afterwards garnish pizza with arugula, pickled red onion, a sprinkle of parmesan cheese, and a drizzle of balsamic reduction
ORGANIC MUSSELS IN WHITE WINE CREAM SAUCE
Serves: 2 Prep Time: 10 Cooking Time: 10
Ingredients
- 1 kg Ocean Mama Organic Green Lip Mussels (defrosted)
- 1 tbsp Vegetable Oil
- 2 Shallots (sliced)
- ¼ cup White Wine
- ½ cup Cream
- 2 tbsp Parsley (chopped)
- 1 Baguette (sliced, for dipping) (optional)
Method
Slice the shallots. Chop the parsley.
Add oil to a large saucepan over medium-high heat.
Add shallots, and sweat for 30 seconds.
Add Organic Mussels (shell facing down), and quickly pour in white wine.
Cover and steam Organic Mussels for about 3min
Once cooked throughout, remove Organic Mussels from the pan and set aside
Add cream to the pan cook uncovered to reduce (by about half)
Add Organic Mussels back into pan (shell facing down)
Use a spoon to coat Organic Mussels with the sauce
Garnish with parsley, and prepare to dish!
Spoon Organic Mussels into dish. Serve hot with sliced baguette for dipping.
Organic Shrimp and Organic Vegetable Sauté
Serves: 2 Prep Time: 5 Cooking Time: 25
Ingredients
- 1 Pkg Organic Shrimp and Organic Vegetable Sauté
- 1 Tbsp Vegetable Oil
- 2 Tbsp Sweet Chilli Sauce (or your favourite Sauce)
- 2 Tbsp Green Onions (optional garnish)
- 2 Tbsp Sesame Seeds (optional garnish)
Method
Place a non-stick fry pan on hot heat.
Add 1 Tbsp of Vegetable Oil. Remove the frozen Organic Shrimp from the package and add to the frying pan.
Remove the Organic Vegetables from the package and add on top of the Organic Shrimp.
Add the 2 Tbsp of water and place lid on pan for 3 minutes.
After 3 minutes, stir and cook covered for an additional 3 minutes.
Remove lid and allow all the water to evaporate, about 5 minutes.
Add your favorite sauce and bring to a simmer.
Add to either, rice or noodles and garnish with sesame seeds and green onions.
